Cauliflower Mock Potato Salad

Cauliflower Mock Potato Salad is unbelievably delicious! If you’ve eliminated night shades such as potatoes from your diet, and you love potato salad, this recipe is for you! Cauliflower “Mock Potato” Salad is a delicious alternative and it tastes identical to potato salad. Auntie Kathy, another Curry Girl and a trained chef, created this wonderful  Mock Potato Salad using cauliflower and we were thrilled!

What better way to celebrate a holiday than having a BBQ or a picnic! What screams BBQ more than a potato salad?  for a picnic we love to bring along Italian chicken nuggets,  fresh green bean salad,  Berry Delicious Fruit Pie and homemade honey lemonade! A totally yum feast all prepared the day before! So get the picnic basket ready, fire up the grill and you’ll be all set and ready to go with this yummy summertime or anytime picnic menu.

    Ingredients

    Units Scale
    • 1 Head Cauliflower (rough chopped)
    • 1/2 cup chopped chives
    • 1/2 cup minced fresh Dill
    • 1/2 C diced Green Spring Onions
    • 4 Stalks celery, diced
    • 2 hard boiled eggs cooled and diced
    • 1 cup Vegenaise, Garlic Aioli, or Mayo
    • 1/2 cup sour cream (optional)
    • Salt and Pepper to Taste

     

    Instructions

    1. Blanch cauliflower for 3 minutes.
    2. Rinse in cold water or cool in an ice bath for 2 minutes.
    3. In a large mixing bowl combine all ingredients and mix well.
    4. Salt and Pepper to taste.
    5. Keep covered and refrigerated until ready to serve.
