Tomatillo Salsa

For nearly a year Pegs had a wonderful house guest who’s family came from Mexico. We LOVED having her not only because she was such a ray of sunshine in our home, she also shared some of her family’s favorite recipe’s with us. This tomatillo salsa was inspired by her family’s recipe with a Curry Girls twist.  It’s super flavorful and simple to make.

Tomatillo Salsa

Ingredients:
8-10 tomatillos, outer skin removed
1/2 red onion
1/4 cup cilantro
3-5 cloves garlic
1/4 – 1/2 jalapeño
3 limes, juiced
1/2 tsp. Celtic sea salt or more to taste

Method:

Blend all ingredients in food processor or blender.

This salsa is great as a snack, topped on chicken or fish then baked, or added to your favorite Spanish rice dish.   There are many ways to enjoy this wonderful condiment! Do share how you choose to eat it.
