Fresh Fruit and Yogurt Parfait
1-2 plums, peaches, nectarines, or berries, washed and diced. Your favorite seasonal fresh fruit.
1 C almond, sheep, goat, or cow yogurt or homemade yogurt
Plum Sauce: Bring to a boil 1/2 C mashed fruit with 1 Tbl honey over medium heat. Let simmer for 2-3 minutes until thickened. Allow to cool before adding to parfait.
Topping Ideas: Granola, coconut chips, chopped nuts, toasted seeds, soaked chia seeds, ground flax seeds
Layer first with yogurt.
Next add diced plums or fruit.
Drizzle fresh fruit sauce over fruit.
Add another layer of yogurt.
Last top with more fruit, another drizzle of fruit sauce and sprinkle toppings of choice.
Voila! Parfaits are great for breakfast, snack, or even a yummy dessert!
