The Skinny Confidential’s Half-Ass Sandwich

The Half-Ass Sandwich

Our dear friend Lauryn Evarts of The Skinny Confidential created this egg salad recipe that we are loving!! Ingredients:

3 hard-boiled eggs

2 tbsp Dijon mustard

1 tbsp vegenaise or garlic aioli

6 cornchinos, diced

¼ apple, diced

1 slice paleo or gluten-free bread

A few dashes of black pepper

A few sprinkles of Celtic sea salt

A few dashes of chili flakes, to taste

Method:

Peel shells off hard-boiled eggs. Put the shell-less eggs into a bowl and mix with a fork. Add Dijon, vegenaise or aioli, cornchinos and apple. Mix together. Add about 3 spoonfulls of egg mixture to a slice of toasted bread.

* We also added a few slices of smashed avocado, heirloom tomato and fresh arugula to our open-faced sando ~ SO yummy!

** You might have some leftover, but that’s all good! Remember this is The Skinny Confidential open-faced sandwich 😉
