Zucchini Noodles with Vegan “Meat” Sauce

Zucchini Noodles with Marinara Sauce and “Vegan Meat”

Ingredients:

1-2 medium zucchini’s, spiralized (pictured below)

1-2 Spring onions, Spring garlic, or a ½ C leek diced

1-2 garlic cloves

2-4 Shiitake mushrooms, diced

½ C radicchio slivered

1 C prepared marinara or pasta sauce

Olive oil

1 Cup Beyond Meat beef crumbles (found in freezer section)

Method:

Spiralize zucchini carefully into your serving bowls. Mix in the slivered radicchio and set aside.

Pre-heat skillet on medium low with olive oil. Add onions, mushrooms and garlic. Sauté for 2-3 minutes until soft.

Add  Beyond Beefy crumbles to onions and mushrooms.  Then add marinara sauce.

Cook for 3-5 minutes until heated.

Top zucchini noodles with veggie beefy marinara sauce. Enjoy!

Optional: sprinkle with  grated Vegan Parma cheese
